Close monitoring continues in order to define the future of each wine, depending on its type, at a commercial level – Crianza, Reserva or Gran Reserva – they are bottled according to regulated cask-ageing periods, following a prior decision shared by Perica and our oenologist, subsequent to successive tastings and discussions.
The ageing process begins in bottles in our cellars, during which the wine will finish harmonizing and combining its latent qualities, softening them and rounding them off in appropriate temperatures (15º), humidity and sufficient aeration, without any light or vibration.Our cellars contain 1 000 000 bottles of different vintages and categories, approximately a third of which becomes commercially available.
